Breakfast Casserole Dish


Mom’s Breakfast Egg Casserole for her son

Mom an I seen this recipe and mom started to add additional ingredients to fit my diabetic needs. Thanks mom!

Ingredients

  • 12 egg large eggs
  • 4 cups of shredded cheese cheese of choice
  • 16 oz cottage cheese
  • 1/2 cup almond flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 tbsp ground cumin
  • 7 oz can of Ortega Diced Chills
  • 1/2 lb Bacon Chopped
  • 1/2 White Onion Chopped

Instructions

  • Pre heat Oven to 350℉
  • Spritz cooking spray into 9×13 dish.
  • Fry Bacon and add onions. Sauté until onions are limp.
  • Ground Cumin in a mortar and pestle.
  • Add eggs to a large bowl and whisk together.
  • Fold in bacon/onion mixture.
  • Whisk in flour, salt & pepper , ground cumin, Ortega chili, then mix in the cheese of choice.
  • Pour into a Spritzed 9×13 dish.
  • Bake for 55-60 minutes or until casserole is cook through.
  • Add some cheese on top!! Let it cool.
  • Enjoy!!
