Ingredients

egg
large eggs

cups
of shredded cheese
cheese of choice

cottage cheese
1/2
cup
almond flour
1
tsp
salt
1/2
tsp
black pepper
1 1/2
tbsp
ground cumin

can of Ortega Diced Chills
1/2
lb
Bacon
Chopped
1/2
White Onion

Instructions
Pre heat Oven to 350℉
Spritz cooking spray into 9x13 dish.
Fry Bacon and add onions. Sauté until onions are limp.
Ground Cumin in a mortar and pestle.
Add eggs to a large bowl and whisk together.
Fold in bacon/onion mixture.
Whisk in flour, salt & pepper , ground cumin, Ortega chili, then mix in the cheese of choice.
Pour into a Spritzed 9x13 dish.
Bake for 55-60 minutes or until casserole is cook through.
Add some cheese on top!! Let it cool.
