Mom’s Breakfast Egg Casserole for her son
Mom an I seen this recipe and mom started to add additional ingredients to fit my diabetic needs. Thanks mom!

Ingredients
- 12 egg large eggs
- 4 cups of shredded cheese cheese of choice
- 16 oz cottage cheese
- 1/2 cup almond flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1 1/2 tbsp ground cumin
- 7 oz can of Ortega Diced Chills
- 1/2 lb Bacon Chopped
- 1/2 White Onion Chopped
Instructions
- Pre heat Oven to 350℉
- Spritz cooking spray into 9×13 dish.
- Fry Bacon and add onions. Sauté until onions are limp.
- Ground Cumin in a mortar and pestle.
- Add eggs to a large bowl and whisk together.
- Fold in bacon/onion mixture.
- Whisk in flour, salt & pepper , ground cumin, Ortega chili, then mix in the cheese of choice.
- Pour into a Spritzed 9×13 dish.
- Bake for 55-60 minutes or until casserole is cook through.
- Add some cheese on top!! Let it cool.
