Prep & Mix
- 1 Cup Monk Fruit Sugar
- 1/2 Cup Coconut Oil
- 1/2 Cup Monk Fruit Honey
- 1 TSP Tapioca Fiber
- 2 TSP Monk Fruit Syrup
- 2 TSP Cinnamon Powder
- 2 TSP Natural Vanilla Extract
- 2 Drop Rosemary Extract
Coconut
- 3 Cups Shredded Coconut
Seeds & Salt
- 1 Cup Sliced Almonds
- 1/2 Cup Chia Seeds
- 1 Cup Sunflower Seeds
- 1/2 tsp Sea Salt
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Add all of the non-nut to a bowl and microwave for 45 seconds. Whisk together until combined.
- Add in the coconuts and seeds and stir to combine.
- Line a baking sheet with silicone baking mat. Spread the granola mixture over the silicone baking mat.
- Line the baking sheet with a 1/4 to 1/2 high – use additional baking sheets
- Bake for 8 minutes for a crunchy-chewy granola. If you prefer a crunchy granola, bake for 13 minutes total.
- Let cool completely.
- Break into small clusters and store in an airtight container.
