About Me....
I’ve been type 2 diabetic since 2019 now. When I first diagnosed of
being type 2 diabetic (A1C - 12.1) and threaten by my healthcare of potential
blindness! I was scared because I witness my grandfather having gone through
the same thing except his toes were being removed because of the gangrene and
poor management of what he was consuming.
So yes, I was eating only tofu with
mustard and water for 6 months. Then my A1C was then 5.7. I started doing
research online & taking online education programs through my Kaiser
Permanente to see what I was doing wrong and seeing what I needed to
change.
I started to read labels of the contents – the ingredients! I found out, I need to remove all carbs and sugar from my diet. I basically I had to tossed
everything in my cupboards that had wheat flour, sugar cane, dextrose,
maltodextrin, corn syrup and corn syrup solids and started over.
Now I’ve been
explaining what I do to stay healthy and keep my glucose & A1C in normal
levels to everyone I see. To make it easier I've created this site to share my
recipes and food products that I use. Airborne!! I just learned about maltitol
syrup, another watches out for effect on glucose levels.
